It is a hand-stretched beef noodle native to Lanzhou in Gansu Province.

It has been known since the Tang era, but it was the Dungans, the Chinese Muslim people, who popularized it in the early 20th century. Since then, the dish has been considered halal.

The word "ramen" comes from two Chinese characters 拉面 [lāmiàn] - "lamien", which means "pulling noodles".

By the mid-20th century, it had spread to Japan, Korea and Central Asia. This is how ramen, ramen and lagmans appeared.
